What I'm cooking this week, a delicious fall salad and the sweatshirt I can't take off.
It’s been a while! Below are a few things I’ve been loving lately. I hate this cycle of sharing holiday content 2 months ahead of time but alas I have to keep up. You can see all of my finds on Instagram and LTK and I’ve been working on gift guides which I will be launching this week. I’m enjoying cozy fall Halloween vibes in my real life!
Our menu this week
I’m excited about this EASY menu I made for the week ahead. Cottage cheese makes a few hidden appearances.
High Protein Broccoli Cheddar Soup with cheesy bread.
Curry Meatballs and rice (I use frozen meatballs and TJs curry sauce) and broccoli.
High Protein Butternut Squash Pasta - hoping my kids will eat this!
Crispy Bean, Sweet Potato & Cheese Tacos- my family always loves these.
Dark Chocolate Oatmeal Bars- I made these today to have as a treat this week.
The best fall salad
I was in NYC last week for work (we launched an amazing collaboration) and had the best kale and shredded brussels sprout salad at Eataly. Though this salad is really quite different, the kale and brussels combo inspired it and it will be made on repeat this fall.

Crumbled bacon ( I get the pre-cooked kind that you just heat up in the microwave to use for recipes like this. It saves so much time and mess)

I’ve been shopping way too much. I’ve traveled SO much this year and with every trip comes my unnecessary desire to buy new clothes for the trip. I just got these red flats for NYC and love the chic silhouette and they are on sale!
I also got a short sleeve sweater which has been on my list for a few months.
What I’ve been wearing most days though is this $10 Walmart sweatshirt It’s the perfect cozy weight, not too thick, not too thin.
These wide leg red corduroys are a FIND. I also got the tan. They are flattering and comfortable. If between sizes I would go down.
Finally, I’ve been loving these chocolate brown leggings that I got on sale during Targt’s Circle Week.
